On his land located in the Granite RCM in Chaudière-Appalaches, actor Fabien Cloutier is preparing to plant several hundred pine trees inoculated with Appalachian truffle mycorrhizae.
The Appalachian truffle is a species of truffle native to North America, particularly in the Appalachian region.
Although less well-known than European truffles like the Périgord black truffle or the Alba white truffle, the Appalachian truffle is gaining attention due to its culinary qualities and potential in gastronomy.
Here is my discussion with Fabien Cloutier (in French) about this ingredient that Fabien hopes will contribute to the reputation of Quebec’s gastronomy.
